BLTA Salad with Lemony Buttermilk Ranch Dressing and a Trip to Pike Place Market

Yesterday was a glorious day in the Pacific Northwest.

I can’t tell you how many times I’ve heard that Seattle is the best place in the world when it’s sunny out. I can’t argue with that. With temperatures in the mid-70s, yesterday was the perfect Sunday.

It all started out with a BLTA (bacon, lettuce, tomato and avocado) salad that I made for Casey and myself. It’s really the perfect salad, if you ask me. Juicy, sweet cherry tomatoes, crunchy bites of avocado and lemony dressing adds up to one very satisfying lunch. I knew I was going later to hang out with my friend Meguire, so I wanted a fairly light lunch. It did the trick.

I live in Tacoma, and my friend Meguire lives in Seattle. Admittedly, I do love going to Seattle as often as I can, although some Tacomans would boo and hiss at me for that.

Sometimes, it’s quite fun to be a tourist in your own city. We headed to Pike Place Market, and it seemed the rest of Seattle was there was well.

Mushroom, Spinach & Mozzarella Mini Crustless Quiches

With Easter this weekend, as well as the beginning of Passover, it’s prime time for brunch.

For me, brunch is not complete without at least one egg dish gracing your table.

When you’ve got company over, making eggs to order is not the way to go. Who wants to make 15 omelets or eggs over easy? Heck no!

Luckily, there’s make-ahead egg dishes that get the job done, and are kid friendly to boot. Kids seem to like little, individual servings of things. To get the little ones interested, make quiches in muffin tins. They’re all ready to go in single servings, and voila! Watch them disappear off their serving plate.

Lettuce Wraps

I’ve been a lot busier the last couple of weeks.

Being busy is great. It really is. I love working, and now that I have extra reasons to write about food, I couldn’t be happier.

The quick and easy weeknight dinner has become essential for me. Actually, add to that cooking in bulk so there’s leftovers for Casey or I to eat when we’re on the run, and you can see the kind of cooking I’ve been doing lately.

Being busy doesn’t mean you shouldn’t still be able to eat healthy, home cooked meals. It just means that there has to be a bit more planning to get meals on the table…or in your lap, in the car, on your way out the door.
