Root Vegetable Soup with Beans and Greens

I’m a major soup girl.  Soup for breakfast, lunch or dinner.

So this comes with great weight that I say this.  This is my FAVORITE soup ever.  Ever.  And I made it.  And it’s easy.  I make it about once every two weeks, just to have in the fridge for lunch or to send to work with my husband.

It’s my favorite for a few reasons.

For one, it uses up my neglected produce box vegetables that sit in the fridge, looking forlorn.  You can throw pretty much any vegetable you have in.  If you don’t have kale, use chard.  No sweet potatoes?  Use potatoes.  No fresh corn?  Frozen is fine.  And so on and so on. Kale and Brown Rice Gratin and a Review of Clearly Fresh Bags

As the summer has dwindled down, (wait, who am I kidding, we hardly had a summer in the Pacific [email protected]@!$), there has been one dish on my mind haunting me from the last time I made it last winter.

Kale is not necessarily a sexy vegetable.  It’s green — very green, and has a hard, incorrigible stalk, and tastes like…well, it tastes really healthy.  Because it IS healthy!  It’s healthy, and beautiful, and green and you must eat it.  Eat it today, eat it tomorrow and feed it to your children.  I’ll get off my platform now.

Brown rice can be thought of as hippie-only food, chewy, brown and — gasp, different than white rice!  But it has really grown on me, and I try to substitute it in for its white counterpart as often as I can.  I have really grown to love its nutty chewiness, and can respect its health benefits.

Easy Green Kale Chips

I have seen kale chips all over the place lately.  And with good reason — kale is in prime season right now.

I should know…each week my farm box contents listing of kale, kale and more kale has got me looking for new ways to use it.  Okay, not just any ways to use it, but ways to get others to eat it who aren’t so convinced they like it.

To be honest, I used to be scared of kale.  Now that I’ve got a couple of good recipes under my belt, it’s a little less threatening.  If you don’t normally cook with or eat kale, this would be a great way to introduce your family to this healthy green. Read More »
