Mediterranean Chickpea Salad

I’ve been a little MIA from A Big Mouthful lately. No excuses, but I wanted to fill you in on what I’ve been doing lately.

Earlier this year, I launched Tacoma Foodie, my other blog.

Yes, there’s someone else. I’m not normally a cheater, but this is an exception.

Tacoma Foodie is my local restaurant blog where I cover all things food in my hometown of Tacoma, WA.

So there. I’m far from done with A Big Mouthful. I’ve just added a new member of the blog family. She’s been birthed and I’m back.

Also, I’ve recently gone pretty much gluten free.

Summer has officially begun. Well, by the calendar, that is. Last week held the first day of summer. Looking outside today in the Pacific Northwest is another story. It’s cold. It’s raining.

Boo.

While the weather might not get the message, summer foods are in full swing. I’m eating all the Rainier cherries, asparagus, watermelon and peaches I can get my hands on.

My Opa brought over some home-grown strawberries earlier this week, and I even got the chance to make strawberry jam. Look for that post later.

If you’ve never had homemade strawberry jam, you’ve not lived. It tastes so…strawberry-y. It’s so strawberry-y, you’ll feel like you’re tasting them for the first time. Summer in a jar.

Recently while at Mayfield Lake with my family, I went on a cooking marathon and came up with this Roasted Tomato, Asparagus and Zucchini Couscous with Lemon Basil Dressing.

It is easily my favorite thing I’ve made in a while. So simple. So freaking full of flavor and goodness. Read More »

BLTA Salad with Lemony Buttermilk Ranch Dressing and a Trip to Pike Place Market

Yesterday was a glorious day in the Pacific Northwest.

I can’t tell you how many times I’ve heard that Seattle is the best place in the world when it’s sunny out. I can’t argue with that. With temperatures in the mid-70s, yesterday was the perfect Sunday.

It all started out with a BLTA (bacon, lettuce, tomato and avocado) salad that I made for Casey and myself. It’s really the perfect salad, if you ask me. Juicy, sweet cherry tomatoes, crunchy bites of avocado and lemony dressing adds up to one very satisfying lunch. I knew I was going later to hang out with my friend Meguire, so I wanted a fairly light lunch. It did the trick.

I live in Tacoma, and my friend Meguire lives in Seattle. Admittedly, I do love going to Seattle as often as I can, although some Tacomans would boo and hiss at me for that.

Sometimes, it’s quite fun to be a tourist in your own city. We headed to Pike Place Market, and it seemed the rest of Seattle was there was well. Read More »

In Washington, the months of October through May can be pretty gray, and month after month of gray can be a bit of a downer.

Today, for about a half hour, I saw blue sky.  No, this is not a metaphor for life — there was blue, and even a spark of sun!

It’s the first week of April and officially Spring.  The local farmer’s markets opened their season this weekend, and the vendors were just as enthusiastic as I was about the glimmer of hope in the sky. Read More »

Beet and Goat Cheese Salad

I had never had a roasted beet until one fateful day this summer.

The beets appeared on the doorstep in my produce box.  I was clueless with what to do with them.  I’d only had pickled beets, which I liked, but I needed to figure out a way to make a meal out of these pretty little red orbs. Read More »
